Origin: AUT

Lallemand

Description
The first in the new range of Lallemand Brewing LalBrew® Limited Release series, Lallemand LalBrew® Aurora is a brand new Northern IPA Yeast. Introduce drinkers to the Northern IPA style! Aurora combines the clean drinkability of West Coast IPAs with the modern character of NEIPA beer styles. Aurora ferments well at low temperatures with high attenuation, and offers slight juicy and fruity ester hints which play beautifully with modern hops. The end result is wonderfully crisp and clean beer.
Beer Styles:
Northern IPA
Cold IPA
Session IPA
Double IPA
Fermentation Range:
12-30°C
Aroma:
Fruity, Floral
Attenuation Range:
74-82%
Flocculation:
Medium to High
Alcohol Tolerance:
13% ABV
Pitching Rate:
50-100g/hL
You'll typically see more fruit characteristics (pear, apple) at lower pitch rates. To ensure consistent fermentation, pitch rates should by optimised to original gravity.
LalBrew® Aurora can be repitched for multiple generations
LalBrew® Aurora & haze LalBrew® Aurora has medium to high flocculation, but it may produce a stable haze with heavy drop hop rates. Haze can be removed by centrifuge, filtration, or fining with gelatin. For a crystal clear Northern IPA using LalBrew® Aurora, use a lower dry hop rates compared to a typical NEIPA recipe. Use kettle finings to remove haze positive proteins. Then centrifuge, filter, or use gelatin finings as required.
Brewing Properties:
Vigorous Fermentation can be completed in 4-5 days.
Brewers on LalBrew® Limited Release Aurora:
"My two cents, this yeast is awesome. Super light and tropical, ester production is presenting lemon zest, lime zest, pineapple and subtle apricot. [...] I think it has legs to be the perfect yeast for modern west coast style IPAs."
Young Blood Brewing
"The final beer has lots of cantaloupe, watermelon rind, green pineapple, under ripened strawberry, muddled citrus, and a touch of mint in the finish."
Barebottle Brewing
"Aroma and flavor wise [...], it's fantastic. Huge stone fruit and peach notes with lots of tropical fruit as well. Super drinkable!!"
