Description
Glucanase Optimum™ is an enzyme beneficial for enhancing lautering and wort filterability. This enzyme contains Beta glucanase produced by
Geosmithia emersonii. AB Vickers Glucanase Optimum™ breaks down polysaccharides such as beta glucans and hemicelluloses (e.g. arabino-xylans) which helps to improve filtration issues in wort and beer and improves brewhouse yields.
AB Vickers Glucanase Optimum™ can be used to improve process efficiency with all types of malts and also when barley, wheat and adjuncts are included in the grist.
Glucanase Optimum also has good temperature stability, and remains active up to the ~75/80C, making it well suited for higher mashing temperatures used in stouts and higher ABV beers.
